Vegan Charcuterie Plate | Caramelized Onion Hummus, Garlic Naan, Dragon Fruit, Grapes, & Celery. | Healthy Recipes.

Hope your weekend is going well so far. I must admit this week has been super inspiring for me. My creative juices are really pumping. I am writing and I can’t wait to share my future project. yay!! I have a couple guilty pleasure most of them involve reality TV lol! Vanderpump Rules, The bachelor and Real Housewives I can not get enough. In a effort not to binge eat tons of snacks I have made a few of these Vegan Charcuterie Plates for one.

I love options and these personal charcuterie boards are the perfect for just that reason. So many options and combinations. This one includes my favourite Hummus. I made caramelized onion Hummus. Hummus as you have probably heard is made with chickpeas.

Chickpeas have been used in Middle Eastern cultures for Thousands of years. The Chickpea is part of the Legume family, they are also called “garbanzo beans”. I am a huge fan of chickpeas because of the texture and nutty flavor. Chickpeas have become a staple in so many household recently because aside from their great taste they have some fantastic benefits. Here are just a few: Chickpeas are High in Protein making them the perfect meat replacement. Chickpeas are not high calorie and they also have so many vitamins, minerals and fibre. Chickpeas are also low in the Glycemix Index which support, blood sugar control. They also support healthy digestion because of the high fibre content. Chickpeas are relatively inexpensive and taste great when added to a variety of recipes. This makes they a great option for so many recipes. What is your favourite way incorporate chickpeas into your diet?? 

Me: Vegan Chickpea meat balls 🙂 

To make this incredible Hummus you will only need a few ingredients:

2 cups of Chickpeas

1/2 cup Lemon Juice

1 Tbsp of Tahini

1/2 Olive Oil

1/2 of Sea salt

3 Cloves of Garlic

2 Small onions

2 Tsp of Balsamic Vinegar

Step By Step Instructions

In a food processor at 3 cloves of garlic , oil, and salt then pulse 3 times. Add chickpea into processor and pulse until chickpeas are smooth. Add in 1/2 of the lemon juice and tahini and mix  until the hummus has no more lumps of chickpeas. Set aside. 

In a medium pot add chopped white onions, olive oil allow cook until translucent on medium heat. 

Add Balsamic Vinegar and mix and allow the balsamic to reduce for 5 mins. 

Let onions slow cook until they take on a caramel colour and liquid evaporates. Should take another 5 minutes.

In the food processor add 3/4 of the onions and pulse once. Add in half the hummus and mix. In a Large bowl add the remaining hummus and lemon juice. Then add the Onions and hummus from processor to the bowl and mix by hand to keep the texture. 

Add your hummus mixture and create a space in the centre for your onions. Sprinkle with Paprika and top with the remaining Onions. 

Now it is time to create your Charcuterie plate. I have this amazing Oval Board which is perfect for one. I cut some celery, Garlic Naan, Dragon Fruit, and handful of grapes. This was the perfect snack for a reality tv binge session.
