DALGONA COFFEE | WHIPPED COFFEE | CASHEW MILK

Happy Friday everyone! 

I decided to try this Viral Dalgona Coffee , Whipped coffee recipe. By no means is this the healthiest coffee option but I did substitute a few ingredients to at least make it plant based. I substituted the regular milk for Cashew milk, and used one tsp of sugar instead of two. It took a few attempts to get the right fluffy whipped coffee. 

Cashews are one of my favourite nuts. The Cashew nut is a native to Brazil known for its light flavour and health benefits. Like most nuts, cashews provide an excellent source of protein. Cashew oil rich in selenium, zinc, magnesium, iron and phosphorous. Also, they are great sources of phytochemicals, proteins and antioxidants.  Cashews Are Rich in Heart-Healthy Fatty Acids and heart-healthy monounsaturated fats. The rich fat content of cashews makes them a perfect substitute for heavy cream. This makes Cashew cream the perfect base for so many vegan alternatives. My favourite is Cashew Queso.

Here is everything you will need to make your own Dalgona Coffee:

2 Tsp of Instant Coffee ( I used Nescafe Gold)

1 Tsp of Granulated Sugar 

2 Tsp of Boiling Hot Water 

Hand Mixer or Whisk 

1 cup of Cashew milk

Instructions: 

In a large bowl, add instant coffee, sugar and hot water. Mix to desolve coffee. Then I used a hand mixing on medium speed for 3 minutes until I got a whipped consistency. 

Add ice cubes to your favourite glass and add your milk. With a ice cream scoop top with your Whipped coffee. Enjoy!! 

This coffee was very strong so I mixed the coffee into the milk to balance it out. Super good!

VEGAN GOLDEN MILK LATTE | HEALTHY RECIPES | IMMUNE BOOSTING DRINKS.

Hope everyone is doing well! I want to share one of my favorite Immune boosting drinks. It is my Vegan Golden Milk Latte made with Almond milk, Turmeric , Fresh ginger and Vanilla extract. It is the perfect warming comfort drink  packed with with tons of antioxidants, and anti-inflamorty properties. This is Latte is fantastic and caffeine free. 

Turmeric may be the most effective nutritional supplement in existence. For hundreds of years, people around the world have linked turmeric to healing properties and cosmetic benefits.  Curcumin is the main active ingredient in turmeric. It has powerful anti-inflammatory effects and is a very strong antioxidant. Curcumin is poorly absorbed into the bloodstream alone it has been recommended  It helps to incorporate black pepper which contains piperine, a natural substance that enhances the absorption of curcumin by 2,000%. The bright, yellow-orange spice is related to ginger. It’s available as a ground spice or in supplements and other beauty and dermatology products. Turmeric is excellent for reducing acne because it is a natural antiseptic and helps to keep bacteria from spreading. It’s especially effective when combined with apple cider vinegar which has astringent properties, which means it would be an amazing DIY toner.

How do you incorporate Turmeric into your diet or beauty routine?

This recipe is so quick to make I made it start to finish in under 3 minutes.

Here is everything you will need:

1 cup of Almond Milk

1 Tsp of Turmeric Powder 

1/2 Tsp Fresh Ginger chopped 

1/3 Tsp Cinnamon Powder

1 Tsp Vanilla extract

Instructions: In a Saucepan on Low heat bring milk to a simmer and whisk continuously to create latte consistency. Add Turmeric whisk in to milk, Add Ginger Whisk into milk, Add Vanilla Extract whisk into milk. Add a pinch of cinnamon whisk into milk. Bring the whole mixture to a rolling boil. Remove from the heat and let stand for one minute and pour into your favourite mug and enjoy!

Chocolate Peanut Buttercup Smoothie. | Vegan Recipes | Breakfast or Dessert Recipes.

Happy Friday Everyone!! This morning I was not sure if I wanted Breakfast or Dessert, so I combined both! I made this Protein Packed Smoothie Im calling my Chocolate Peanut Buttercup Smoothie. It tastes just like a Reeses Peanut butter cup in a smoothie. I used Chocolate Hemp Milk, Cocoa Powder, Peanut Butter and Chia seed. This smoothie is protein packed and prefect to start your day. The decadent whip on top is Coconut Whipped cream and Salted Caramel Topping. It was the perfect smoothie if you need a Friday pick me up. 

Hemp Seeds are the seed of the Hemp Plant, Cannabis Sativa. Hemp Seed are know technically a nut, that have a mild nutty flavor. Hemp seeds are very nutritious and rich in healthy fats, protein and various minerals. They are known as Hemp Hearts. They are rich in two essential fatty acids, linoleic acid (omega-6) and alpha-linolenic acid (omega-3). Hemp seeds are a great protein source, as more than 25% of their total calories are from high-quality protein. Whole hemp seeds contain high amounts of fiber both soluble and insoluble which benefits digestive health. They are very rich in healthy fats, which makes them a great addition to so many meals. I love to use them in smoothies. 

Here is everything you will need :

1 Large Banana 

1 Tbsp Of Cocoa Powder 

1 Cup of Plant Based  Chocolate Hemp Milk

1 Tsp Chia Seed

1/2 Cup Ice 

Optional Topping 

Coconut Whipped Topping 

Salted Caramel Topping

Instructions: 

Step 1: Add Chopped Bananas, Hemp Milk, Chia Seeds, Ice and Cocoa Powder to Blender. Blend on Medium until smooth. 

Step 2: Pour into your Favourite cup and Garish with tons coconut whip and drizzle with Salted caramel. 

Step 3: It is thick enough to eat with a spoon but you can drink with a straw. ENJOY!!

Veggie Pot Pie | Vegan Comfort Food | Healthy Recipes.

#HappyWednesday! Hope you all are enjoying this snowy February day. I wanted to post one of my Comfort Food recipes as I thought it would be just what I needed today after this weather. Here is my Warm and Savory Veggie Pot Pie. I used tons of Mushrooms and other amazing veggies. It does have Pastry with Gluten so this is a Healthish recipe. I loved how it turned out, It was perfect!

Mushrooms are one of my favourite meat replacement options. Mushrooms have so many varieties different shapes, sizes and textures. Mushrooms are low calorie, fat free and cholesterol free. They are fibre rich, full of vitamins and minerals.  Mushrooms are rich in the B vitamins: riboflavin, niacin, and pantothenic acid. Mushrooms are rich in the antioxidant called selenium. Mushrooms are incredibly versatile. You can prepare them in so many ways and pair them with tons of different ingredients. The most common types of mushrooms are: shiitake, portobello, crimini, button or white mushroom, oyster, enoki and maitake. 

This recipe made 4 Medium Veggie Pot Pies

Total Time 50 mins

Ingredients: 

1 Large Potato

1 Large Onion

1 Cup of White Button Mushrooms 

1/2 cup of Carrots 

1/3 Celery 

1 cube of Veggie Boulion Stock 

1 Sprig of Cilantro 

1 Tbsp All purpose Flour 

1 tsp garlic powder

1/3 salt 

1/3 black pepper 

1/3 paprika 

1 Sheet of Pillsbury Pastry

Step by Step Instructions 

Step 1: Prep Veggies, Wash and cut all vegetables into small bite size pieces.

Step 2: In a Large Pot, On medium heat add 2 Tbsp of Olive Oil. Add Onions cook until translucent. Add Tbsp of flour and 1/2 cup of water. Allow the flour to cook for 2 mins. 

Step 3: Add Potatoes,  mushrooms and Veggie Bouillon cube. Cook for 5 mins bring to boil. 

Step 4: Preheat oven to 370 degrees. Add Carrots and celery and peas. Add salt, garlic powder, black pepper and paprika. Mix well cool for 5 mins. 

Step 5: On Baking Sheet place Ramkens and Fill with Veggie mixture 3/4 of the way. Cut the Pastry into 4 pieces. Roll squares out and place over ramkins. Use a knife to add a slit for ventilation. 

Step 6: Brush tops with Almond milk for crispy shiny crust. Place in Oven for 25 mins. Until Pastry is fully cooked and has a golden brown crust. 

Step 7: Allow to cool for 5 mins and Enjoy!

Ginger Grapefruit Paloma | DIY Mocktails | Healthy Recipes

Hey Loves!

Happy Thursday!! This week I wanted to bring forth a Cocktail recipe. I think this drink is equally great with or without the tequila. I loved this drink when I was in Mexico. It traditionally is made with Grapefruit juice, Limes and Tequila. It is delicious. I wanted to add ginger juice to my version and I topped it with La Croix Sparkling Water. You will only need a few ingredients for this Refreshing Mocktail.  Grapefruit, Lime, Ginger Juice, La Croix and Coconut Sugar. 

Health Benefits of Lime 

Lime are known for the Sour, bright green and lovely aroma. Limes are nutrient packed and have tons of health benefits. They are high in Vitamin C which aid in boosting your immunity and improving the appearance of your skin. Limes  also contain iron, calcium, potassium, and vitamin B6. Limes are high in Ascorbic Acid, flavonoids, and quercetin. These compounds act as antioxidants in the body. I love adding lime to water to help aid in digestion. The citric acid found in lime juice helps boost a person’s metabolism, helping them burn calories. Limes are a great additional to so many recipes because of the taste and colour. They are a staple in so many cultures. 

Ginger Grapefruit Paloma Ingredient List:

Total Prep Time: 2 mins

Total Time: 5 mins

Makes 4 Mocktails.

2 Limes

1 Large Grapefruit

1/2 Fresh Ginger Juice

2 Cans of Grapefruit Lacriox Sparkling Water

Step by Step Instructions :

Step 1: In a large pitcher squeeze juice of one half of a grapefruit. (1/2 cup of Juice)

Step 2: Squeeze 1 Lime into pitcher. (1/3 cup)

Step 3: Add ginger juice into pitcher (1/2 cup). Mix well.

Step 4: Add one can of Lacroix into pitcher mix well.

Step 5 : Take Limes and rub along the rim of glass and dip into coconut sugar. Repeat to all glasses.

Step 6: Pour into glasses and top up with more sparkling water. Garish with lime wheels and Grapefruit triangles.

Strawberry Cocoa Butter Toast | Healthy Brunch Recipe | Valentines Day Brunch.

This is a super quick Valentines Day Brunch recipe. Its so cute and tasty. I call it my Strawberry Cocoa Butter Toast ! It is a satisfying breakfast or brunch idea. I made the Cocoa with two ingredients. Almond Butter and cocoa Powder. The star of the show is defiantly the Heart Shaped Strawberries. They are cute everyday but especially on this Valentines day! Made with Love, and you are starting the day spreading the Love !!

Strawberries are the sweetest and juiciest fruit in my favourite season which is around the corner hopefully….SUMMER! I know I’m early but a women can hold onto hope. There is nothing better then in season strawberries. Aside from the sweet taste they have some incredible health benefits. Strawberries are immune boosting as the have a large amount of vitamin C and packed with antioxidants. The antioxidants found in the strawberries also fight free radicals the contribute to inflammation in the body. The Glycemic Index also has Strawberries list quite low making the good to eat without spiking blood sugar. They also are fibre packed which makes the great to add to your diet to promote digestion. The seeds of strawberries contain the omega-3 fatty acid alpha-linolenic acid, which improve mood. One of my favourite benefits of strawberries is the vitamin C in strawberries is used by the body to produce collagen, a protein essential to skin health. yay!!! 

Ingredients :

Strawberries 

Dragon Fruit

Chia Seed Harvest Toast

Almond Butter 

Cocoa Powder 

Coconut Flakes

Step 1 : Mix Almond Butter and 2 tbsp of Cocoa Powder. 

Step 2: Cut a V into top of Strawberries and slice in half to create heart shape. Cut mini circles with a knife out of the dragon fruit.

Step 3: Toast slices of bread.

Time to assemble the pretty Toast.

Add a thick layer of the Cocoa Butter to Toast, place strawberries and dragon fruit in a cute design and sprinkle with coconut flakes. 

I didn’t add measurement for this recipe because the amounts will differ based on how many people you are serving. 

Now is the fun part, time to Enjoy! I almost didn’t want to eat it because it was so darn cute! lol

Dragon Fruit Mini Donuts | DIY Baked Vegan Donuts.

Hey Loves!! Happy Thursday!

Mini Donuts are one of my favourite desserts, I  have loved making these past couple weeks. They are so light and tasty. I have your perfected this recipe and it is the perfect base for a Fluffy Vanilla Donut. With this recipe you can add any other fruit flavours and they work well. My favourite is this Dragon fruit recipe. 

Dragon Fruit also known as Pitatya is such a beautiful fruit. This tropical fruit is grown through Southeast Asia. Dragon fruit has so many health benefits. Dragon Fruit is Low Calorie but packed with nutrients. It has high levels of Fibre, 1 cup is 7 grams of fibre which is fantastic for digestive health. Dragon Fruit also contains Prebiotics  that aid in the balancing of good bacteria in  the gut. Another benefit of eating Dragon Fruit is the high amounts of Vitamin C and Caroteniods. The carotenoids can neutralize free radicals and defend your white blood cells against harm making them extremely immune boosting. Dragon fruit is a great source of magnesium. Magnesium is important in supporting bone health. Dragon fruit is filled with phytonutrients that can provide you with tons of antioxidants. It is no surprised it has been referred to a “powerhouse fruit”. One of my favourite uses of this exotic fruit is in skin care. I have used it in a natural mask recipe for brightening and anti-aging benefits. 

Here is everything you will need for these mini donuts:

Makes 8 mini donuts – 25 mins prep and cook time.

Ingredients:

1 cup gluten free flour

1/2 cup Cashew milk

1 Tbsp Lemon juice

1/3 tsp Nutmeg

1/2 Baking Soda

1/3 Baking powder 

1 cup Dragon Fruit 

1 tbsp of coconut sugar

1/2 tsp Vanilla extract

1 pinch of Salt

1/2 cup white cocoa chips

1 1/2 tbsp coconut oil.

Instructions:

Step 1: Add Lemon Juice to Cashew milk. Let milk thicken for 10 mins. (Vegan Buttermilk replacement)

Step 2: In a Mixing bowl add Coconut oil, and sugar. Mix with whisk until sugar dissolves. Add thickened milk, vanilla and mix until it is well combined. 

Step 3: Add flour, baking powder/soda, nutmeg and salt into wet mixture. Fold in the flour until mixed. Don’t over mix just make sure it is all incorporated.

Step 4: In a bowl add 3/4 of a cup Dragon Fruit. Mask with a fork make a puree. Add the puree into the batter and fold into the batter. 

Step 5: Spray the Donut tins with Coconut Oil and Preheat oven to 350 degrees. 

Step 6: In a Pipping Bag add batter and pipe equal amounts into the donut tin. 

Step 7: Place into over for 9 mins. 

Icing Instructions:

In a Double boiler melt white Cocoa Chips until smooth. Remove from double boiler allow to cool down for a 2 mins. Add in remaining puree , avoid adding the juice from the dragon fruit. Optional add one drop of pink food colouring. 

Remove Donuts from tins and allow to cool before dipping them in the icing. 

Dip and allow to dry on cooling tray.

Vegan Charcuterie Plate | Caramelized Onion Hummus, Garlic Naan, Dragon Fruit, Grapes, & Celery. | Healthy Recipes.

Hey Loves!

Hope your weekend is going well so far. I must admit this week has been super inspiring for me. My creative juices are really pumping. I am writing and I can’t wait to share my future project. yay!! I have a couple guilty pleasure most of them involve reality TV lol! Vanderpump Rules, The bachelor and Real Housewives I can not get enough. In a effort not to binge eat tons of snacks I have made a few of these Vegan Charcuterie Plates for one.

I love options and these personal charcuterie boards are the perfect for just that reason. So many options and combinations. This one includes my favourite Hummus. I made caramelized onion Hummus. Hummus as you have probably heard is made with chickpeas.

Chickpeas have been used in Middle Eastern cultures for Thousands of years. The Chickpea is part of the Legume family, they are also called “garbanzo beans”. I am a huge fan of chickpeas because of the texture and nutty flavor. Chickpeas have become a staple in so many household recently because aside from their great taste they have some fantastic benefits. Here are just a few: Chickpeas are High in Protein making them the perfect meat replacement. Chickpeas are not high calorie and they also have so many vitamins, minerals and fibre. Chickpeas are also low in the Glycemix Index which support, blood sugar control. They also support healthy digestion because of the high fibre content. Chickpeas are relatively inexpensive and taste great when added to a variety of recipes. This makes they a great option for so many recipes. What is your favourite way incorporate chickpeas into your diet?? 

Me: Vegan Chickpea meat balls 🙂 

To make this incredible Hummus you will only need a few ingredients:

2 cups of Chickpeas

1/2 cup Lemon Juice

1 Tbsp of Tahini

1/2 Olive Oil

1/2 of Sea salt

3 Cloves of Garlic

2 Small onions

2 Tsp of Balsamic Vinegar

Step By Step Instructions

In a food processor at 3 cloves of garlic , oil, and salt then pulse 3 times. Add chickpea into processor and pulse until chickpeas are smooth. Add in 1/2 of the lemon juice and tahini and mix  until the hummus has no more lumps of chickpeas. Set aside. 

In a medium pot add chopped white onions, olive oil allow cook until translucent on medium heat. 

Add Balsamic Vinegar and mix and allow the balsamic to reduce for 5 mins. 

Let onions slow cook until they take on a caramel colour and liquid evaporates. Should take another 5 minutes.

In the food processor add 3/4 of the onions and pulse once. Add in half the hummus and mix. In a Large bowl add the remaining hummus and lemon juice. Then add the Onions and hummus from processor to the bowl and mix by hand to keep the texture. 

Add your hummus mixture and create a space in the centre for your onions. Sprinkle with Paprika and top with the remaining Onions. 

Now it is time to create your Charcuterie plate. I have this amazing Oval Board which is perfect for one. I cut some celery, Garlic Naan, Dragon Fruit, and handful of grapes. This was the perfect snack for a reality tv binge session.

Pretty Pastel Waffles | Breakfast Recipes | DIY Brunch Ideas.

Hey Loves!! Happy Sunday!! Hope everyone is enjoying their weekend. I made these Pretty Pastel Waffles a few weeks ago. I made them with Gluten Free Flour and Pomegranate Stevia. These Waffles taste Pretty awesome. 

I have to admit I am not the biggest fan of artificial sweeteners but this Pomegranate Stevia taste like pure Pomegranate juice and no artificial flavours. 

Pomegrante are so beautiful, and among the worlds healthiest fruits.  Pomegranate “Punica granatum” have a rich history of being grown for centuries in India, Mediterranean , Asia, and Parts of Africa. These ruby fruits are known today for the jewel like Arils (seeds) but in ancient time Pomegranates were widely known to represent fertility. Some of the known health benefits are Pomegranates nutritional profile include being rich in fiber, vitamins, minerals and bioactive plant compounds called  punicalagins and punicic acid. Punicalagins are extremely potent antioxidants found in pomegranate juice and peel. Punicic acid is found in pomegranate seed oil, this is the main fatty acid in the arils. Regular intake of pomegranate juice has been shown to lower blood pressure levels. Pomegranate have antibacterial and antiviral properties. Pomegranates are part of a healthy diet and may aid in weight loss efforts. With all these benefits I think it is worth the messy clean up. How do you enjoy Pomegranates?

Here is a everything you will need for these waffles:

1 cup of Gluten Free all purpose flour

1/2 Almond milk

1 Tsp of Vanilla extract 

1 Tbsp of Pomegranate Stevia 

1 Tbsp Coconut Oil

1 1/2 tsp of Baking Powder

1/2 Salt 

1 Squirt of Vegatarian Food colours (Pink,Turquiose,Purple)

Preheat your Waffle maker (spray with coconut oil )

Step 1: Combine Dry ingredients and mix with whisk. Add almond milk, vanilla extract, Pomegranate stevia, and coconut oil.  Mix well.

Step 2: Divide batter into 3 bowls and Color each with food colour. 

Step 3: In the waffle maker add a table spoon of each coloured batter to create the marble appearance. 

Step 4: Allow the waffle to cook for 3 minutes. 

Step 5: Repeat these steps, This makes 6 Large waffles. 

Step 6: Garnish with a light dusting of powdered sugar, and fruit or maple syrup 😉 and Enjoy!!

Superfood Sea Moss Gel ( Irish Moss ) | Healthy Recipes.

This Week I made a nutrient packed Superfood Sea Moss Gel. This Gel is the perfect additional to Smoothies, Soups and even a amazing Face mask. For this multipurpose Gel you will only need one ingredient, Sea Moss ( irish Moss).

I admit this sea moss was not easy to find as they typically don’t sell it in your grocery stores. After searching for a couple weeks I found this in a Small Caribbean Grocery store in my city. I have found it online as well. 

 I am so excited to talk about Sea Moss. This amazing algae from the ocean is living proof that everything we need comes from the earth. Food is Medicine. Sea moss is a natural immune booster and has been used in many cultures as a medicine to treat many illnesses. Sea moss is a whole food, nutrient packed. Sea moss has 92 of the minerals are bodies require. This alone made me super excited to include incorporate into my diet. Sea Moss also aids in digestion as will as improving your overall gut health by getting rid of harmful bacteria. Sea Moss is loaded with B vitamins making it a natural energy booster. Many people use Sea Moss in their skin care routines with great results due to a compound found in the Sea Moss called “Citrulline-Arginine” . This compound helps with collagen regeneration which improves the overall appearance of the skin. One of my favourite benefits is the mood boosting effects sea moss offers because it is High in Magnesium and Potassium.

Now that you know why it is so awesome, here is the instructions for making the Sea Moss.

Step 1: Wash the Sea Moss VERY well. I rinsed it 4 times.

Step 2: Place in a bowl and fill with cold water, limes juice (optional).

Allow to soak overnight .

Step 3: In a large pot bring sea moss to a boil with one cup of water.

Allow Seamoss to thicken. 

Step 4: In a blender, puree mixture until smooth. 

Allow mixture to cool and store mixture in a sealable jar and keep refrigerated. 

With all of these benefits I have to incorporate it into my diet. I recently started adding a Tablespoon to Green Smoothies in the Morning. I love it!!!
